Sweet Potato Chips
- Preheat oven to 210°C and prepare an oven-safe tray with baking paper
- Peel 500g orange sweet potatoes and cut into 1cm thick chips
- Toss sweet potato chips with 1 tablespoon vegetable oil, ¼ teaspoon salt, and ¼ teaspoon of pepper
- Bake for 20 minutes or until tender and lightly browned, turning once
Burger Fillings
- Halloumi, caramelised onions, freshly sliced pickles
- Avocado, Swiss cheese, mango relish
- Crumbled fetta cheese, fresh spinach, sliced red onion
Creamy Slaw
- Whisk 250ml mayonnaise, zest and juice 1 lemon, 2 tablespoons cider vinegar, 2 tablespoons wholegrain mustard, 1 teaspoon celery salt
- Thinly slice ¼ head white cabbage, ¼ head red cabbage, 2 carrots, 1 large red onion and 2 sticks celery
- Combine all ingredients together and mix well, season generously
Crunchy Chicken Noodle Salad
- Whisk 2 tablespoons peanut oil, 2 teaspoons sesame oil, 2 tablespoons white vinegar, 1 tablespoon caster sugar, 1 tablespoon sweet chilli sauce and 2 teaspoons soy sauce until combined
- Combine 2 cups shredded roast chicken breast, 4 cups thinly shredded Chinese cabbage, 4 diagonally sliced green spring onions, 1 cup shredded carrot, 1 cup loosely packed fresh mint leaves and 100g packet crunchy noodles in a large bowl
- Mix all ingredients together and serve immediately
