Place the cauliflower florets in a food processor. Pulse until reaches a rice-like consistency.
Place the cauliflower rice in a microwave-safe bowl and microwave for 3-4 minutes. Taste to check rice has a good texture and is not too soft
Place cucumbers, tomatoes, parsley and mint into a salad bowl. Add the cauliflower rice.
Whisk olive oil and freshly squeezed lemon juice, season with salt and pepper.
Pour the dressing over the salad, toss well and garnish with lemon wedges.
Important Hint – Make fresh for immediate use, or keep cauliflower and other ingredients separate. Only combine ingredients just prior to serving to ensure crispness.
