Pre-heat fan-forced oven to 180ºC. Line baking tray with baking paper.
Wash cauliflower then cut into small pieces. Add into bowl and drizzle with olive oil and season with salt and pepper, gently toss.
Place cauliflower pieces onto baking tray and bake in oven for 15 minutes, or until golden.
While cauliflower is cooking, wash spinach leaves, thinly slice red onion and thinly cut walnuts.
Once cauliflower is cooked, remove from oven and place in a large bowl. Toss through with other ingredients. Season with salt and pepper and serve with lemon on the side.
