Preheat oven to 200 ºC.
Peel and cut parsnips, place in a bowl and drizzle with olive oil. Sprinkle with spices, salt and pepper and coat evenly using your hands.
Place a piece of baking paper on a flat baking tray and grease lightly with olive oil. Spread parsnips onto tray and bake for 20 minutes until golden brown.
Remove from oven and drizzle maple syrup over parsnips and return to oven for a further 5 minutes.
Remove from oven and allow to sit for 15 minutes before serving. When serving, sprinkle with fresh parsley or fresh herbs of your choice.
